Wild Herbs Salad with Goat Cheese & Caraway Caramel – by Armeritta Supper Club

The guests of Armeritta Supper Club really loved this goat cheese salad: It’s extremely easy to make and the caraway caramel gives it a very interesting flavor.


Wild herbs salad mix (alternatively lamb’s lettuce)

Fresh goat cream cheese (ideally organic)

1 teaspoon of caraway

5-6 teaspoons of sugar

250ml of water



1. Arrange the salad leaves and the goat cheese on a plate

2. Crush the caraway in a mortar

3. Melt the sugar in a pan until it gets golden-brown (careful, it goes quite fast!)

4. Add the crushed caraway to the sugar, mix and add the water. This makes the caramel get solid. Stir until the caramel has dissolved and keep boiling, allowing the liquid to reduce until it gets syrup-like

5. Drizzle the caramel-syrup around the goat cheese, serve with fresh baguette and a glass of white wine
